Job Title:  Junior Assistant Food & Beverage Manager

The Empire Brunei, Brunei Darussalam

PURPOSE OF ROLE

To provide management/ leadership in delivering excellent service across all F&B outlets, in compliance with Halal, HACCP and LQA standards

CORE JOB FUNCTIONS

  1. Supporting and overseeing daily F&B operations to deliver service to the SOPs and LQA standards
  2. Facilitating and coordinating service between the kitchen, service team and other departments
  3. Monitoring food and service quality, engaging and responding to guests
  4. Conducting briefings and meetings
  5. Providing on-the-job training to uphold performance and grooming standards
  6. Assisting with scheduling, manpower planning and basic administrative reporting
  7. Coordinating and overseeing the execution of events, promotions and special functions
  8. Monitoring stock levels, supporting ordering processes and ensuring proper inventory control
  9. Supporting the implementation of Halal and HACCP compliance controls

CANDIDATE REQUIREMENTS

1. Education

  • Hospitality degree (essential) 
  • Excellent level of written and spoken English (essential)

2. Experience

  • Five years’ experience as a restaurant manager in a luxury hotel

3. Physical requirements

  • Physically capable of carrying out all aspects of the role
  • Hours to suit the business needs over 7 days including weekends and Public Holiday

4. Functional Knowledge

  • Micros / POS / Microsoft Office 365 (essential)
  • Food Safety Level 3 (essential)
  • HALAL certification and licensing
  • Luxury hotel F&B service standards and organisation
  • Operational experience of managing large events / functions
  • Administration and controls
  • Coaching and development of staff
