Job Title: Kitchen Steward
The Empire Brunei, Brunei Darussalam
PURPOSE OF ROLE
To support the Chief Steward and team managers in providing an efficient and safe stewarding operation in support of all kitchen food production and F&B service, in compliance with Halal and HACCP within a budgeted cost
CORE JOB FUNCTIONS
1. To undertake cleaning and sanitising tasks for all kitchens and back areas to the highest standards by
- Completing daily routine cleaning duties using effective and appropriate cleaning methods/materials
- Reporting maintenance issues to the Supervisor and following up on its completion
- Working to cleaning schedules and complying with HACCP standards
- Collaborating in being assigned to different locations, as and when required by the business on the day
2. To clean, maintain, distribute and store all operating equipment as directed
- Delivering equipment required to the right place, at the agreed standard time
- Storing all surplus clean equipment tidily in the correct designated areas
- Ensuring equipment is both used and stored correctly to prevent damage
3. Effectively cleaning kitchen and F&B equipment to support daily use through
- Daily cleaning activities to keep the equipment in good working order
- Reporting any maintenance concerns to the Supervisor
4. Following guidelines on the efficient and safe use of cleaning supplies by
- Placing these in the correct storage areas
- Using stock rotation in to manage perishables and use-by-dates
- Taking all necessary care to prevent loss through wastage
- Complying with HACCP, COSHH and MSDS
5. Handling Hotel refuse and recycling properly by
- Placing all items for disposal in the correct storage bin/ skip
- Routinely cleaning of all storage units and areas
- Reporting pest control issues to the Supervisor

CANDIDATE REQUIREMENTS
1. Education
- School leaver level of education
- Food hygiene certificate
2. Experience
- Previous experience in a food and Beverage or hotel environment
3. Physical requirements
- Physically capable of carrying out the duties of the post
- Carrying and lifting, walking and standing for long periods, working in a hot environment
- Shift working over seven days per week, from early morning to late night and Public Holidays
4. Functional Knowledge
- Understanding of kitchen equipment, cleaning equipment and stewarding procedures
- COSHH, HACCP, MSDS and Food safety standards (training will be given)
